Chayote Soup
Ingredients:
- 1 medium onion, minced
- 2-3 small garlic cloves, minced
- 1-2 tsp minced small fresh hot green chile such as serrano or Thai
- 1 T olive oil
- 1-2 chayotes, peeled then cut into 1/2-inch pieces
- 2 tsp mixed herb seasoning
- 1 tsp white pepper
- 1 tsp seasoning salt
- 1/2 tsp cayenne
- 1/2 tsp nutmeg
- 1 3/4 cups veggie broth
- 2-3 T finely chopped fresh cilantro
Directions:
Lightly fry onion, garlic and pepper in the olive oil then add squash pieces and cook several minutes until they begin to soften. Add broth and spices, except the cilantro, and bring to a boil. Reduce heat and simmmer 10-15min. In several batches, blend in blender until smooth. Return to pan and add cilantro. Serve warm.
