Chocolate Chocolate Chip Cream Cheese Muffins



Beat together first two ingredients. Set aside. Mix all dry ingredients together in a bowl. Add replaced eggs, some of the milk and the oil. Stir until lightly mixed and add the rest of the milk as needed.

Spoon each sprayed muffin cup half full of batter. Add a small drop of the cream cheese mixture to each muffin, until all of it is used up. Fill the remainder of each muffin cup with batter.

Bake 375 for 20min. Remove from pan after allowing 2min cooling time. Place on rack. Makes 12 muffins.

I usually mix the flours like half oat flour, half unbleached or half WW and half unbleached or half WW pastry flour, half spelt etc. It will taste different based on what flours you use and which milk you pick.
