Coconut Custard



Place the water and coconut in a bowl and allow to stand 15min. Using a hand mixer, blend at high speed briefly, then add the remaining ingredients and blend until well mixed. Place into well greased glass baking dish and bake in 350 oven for 70-75min. Cool well before serving.

Slivered almonds are really good in this custard too. You didn't mention being in the mood for them, but just in case :-)
