Friendship Soup

Ingredients:

• 1/2 cup dry split peas
• 1/2 cup uncooked long grain rice
• 1/2 cup lentils
• 1/2 cup macaroni
• 1/3 cup veggie bouillon powder (or 8-9 cubes)
• 1/4 cup pearl barley
• 1/4 cup dried minced onions
• 1 T. Italian seasoning
• 2 tsp. garlic powder
• 1 tsp. crushed red pepper
• TVP sausage (or other vegan sausage)
• 3 quarts of water
• 1 can (28 oz.) tomatoes, undrained
• oil

Directions:

In a large saucepan brown TVP in a small amount of oil. Add the water, tomatoes and remaining ingredients, except macaroni. Bring to a boil then reduce heat.Cover and simmer for 45 min. Add macaroni and simmer for 20 min. more.

For soup mixes, put together all dry ingredients (everything above the TVP sausage), keeping the macaroni separate in a smaller baggie. Follow directions as written.
