Big Family Soup Mix
Ingredients:
- Bean Mixture:
- 1 pound dried black beans
- 1 pound dried red beans
- 1 pound dried kidney beans
- 1 pound dried navy beans
- 1 pound dried great northern beans
- 1 pound dried baby lima beans
- 1 pound dried large lima beans
- 1 pound dried pinto beans
- 1 pound dried green split peas
- 1 pound dried yellow split peas
- 1 pound dried black-eyed peas
- 1 pound dried green lentils
- 1 pound dried brown lentils
- Spice Packets:
- 1/3 cup dried parsley
- 1/3 cup dried onions
- 3 tsp garlic powder
- 2 bay leaves
- 2 tsp chili powder
- 1 tsp cumin
- pinch of crushed red pepper
- Additional Ingredients:
- 1 large can crushed tomatoes
- 6 cups water
- 1 tablespoon red wine vinegar
- salt/pepper to taste
Directions:
Scoop out 2-3 cups bean mixture. Cover beans with water and soak overnight. Drain beans and place in a pot. Add tomatoes, water and spice packet. Bring to a boil over medium high heat. Cover and simmer 1 hour or until beans are tender. Remove bay leaf and add vinegar. Use salt/pepper to taste before serving.
You can add meat substitutes to this recipe. If adding TSP, simply toss it in to cook with the beans. For other meat substitutes, add closer to the end of cooking. Use your judgment, but "beef" or "sausage" are both very good in this soup.
