Curried Beans #3



Lightly fry some onion, garlic and red pepper (or several colors of bell peppers) in some oil then add all three cans of beans (rinse well first) to the pan and lightly toss with the oil and veggies. Spice with 1 tablespoon minced fresh ginger, 1 teaspoon curry powder, 1 teaspoon chili powder and 1/2 teaspoon cayenne next, then mash about half of the beans while they're still heating. Add coconut milk once the beans are mashed. I'd add a can, but you might want to start with less if you like it thick.
