Chickpea Muffins



Simmer dried fruit in juice for about 10min. Combine in food processor with chickpeas and mix well. Add replaced eggs, milk, sugar and oil. Set aside while you mix dry ingredients in another bowl.

Once all dry ingredients are well mixed (including nuts and coconut) pour wet ingredients in and stir well. Fill greased or lined muffin cups. Bake at 350 for 20-25min.
