Jicama Slaw
Ingredients:
- 2-3 cups jicama, cut into thick sticks
- 1/2 cups green cabbage, thinly shaved
- 1/2 cups red cabbage, thinly shaved
- 1 red pepper, cut into thin sticks
- 1 yellow pepper, cut into thin sticks
- 1/2 red onion, thinly sliced
- 3-4 T chopped, fresh cilantro leaves
- 1/3 cup canola oil
- 4 T fresh lime juice
- 1-2 T minced fresh garlic
- 1 serrano chile, minced tiny
- 1 tablespoon Tofutti sour cream
- 2 tsp sugar
- 1 tsp chili powder
- 1/2 tsp cumin
- salt and pepper to taste
Directions:
Toss veggies together in a bowl. In a separate bowl, whisk together all wet ingredients and spices. Pour over veggies and toss well. Serve cold.
Possible additions are coconut, raisins, nuts, other colors of bell peppers, carrots, radishes etc.
