Banana Bread (coconut flour version)
Ingredients:
- 1 cup coconut milk
- 1/2 cup flaxmeal
- 3-4 ripe bananas, smashed
- 1/2 cup brown sugar
- 1 tsp vanilla
- 1/2 tsp almond extract
- 1/2 cup nutmeal (any combination of nuts ground up)
- 3/4 cup coconut flour
- 2 tsp dry egg replacer
- 1 tsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 1 cup chopped nuts or chocolate chips (I used an equal mix)
Directions:
Combine first two ingredients and set aside. Combine remaining wet ingredients and stir into milk/flax mixture. Stir together all dry ingredients (including chocolate chips) and pour wet ingredients over. Mix just until combined and pour into greased loafpan. Bake at 350 for about an hour.
