Vegan Pei Wei Wraps
Ingredients:
- For each cup of dry TVP:
- 1 T vinegar (any kind you like)
- 1 tsp soy sauce
- boiling water to the 7/8 line
- Add:
- bean sprouts
- diced onion (minced small)
- garlic, minced
- a small grate of ginger
- squished azuki beans (canned)
- stir-fry sauce
Directions:
Soak TVP until soft. Add remaining ingredients and hold together with enough stir-fry sauce to get semi-wet consistency. Wrap in crisp, cold lettuce leaves. Garnish with dry oriental noodles if you like.
