Lemon Cream Cheese Frosting

Ingredients:

• 1/4 cup margarine, softened
• 3 T. tofu cream cheese, softened
• 1 T. coconut milk
• 2 cups powdered sugar
• 1 T. lemon juice
• 1 tsp. lemon zest
• 1 tsp. vanilla

Directions:

Place the margarine, tofu cream cheese, and milk together in a large bowl. Using an electric mixer cream them together. Add half of the sugar, and beat well to combine. Add the remaining ingredients and continue to beat the mixture until light and fluffy.
