Curried Wheatberries
Ingredients:
- 1 cup wheat berries (soaked then cooked)
- 1 red onion, chopped
- 3-4 stalks celery, chopped
- 1/4 cup raisins
- 1/4 cup walnuts, chopped
- 1/4 cup flaked coconut
- 1/2 can coconut milk
- 2 T. olive oil
- 2 cloves garlic, minced
- bunch fresh chopped parsley
- 1 T. fresh lime juice
- 1 1/2 to 2 T. curry powder
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. ground red pepper
Directions:
Place everything down to the coconut in a large bowl together. Place the coconut milk, and everything below it, into a blender. Blend well and pour over the mixture in the bowl. Toss together well and serve cold.
Additions:
bell peppers (any color)
chopped basil (instead of parsley or mixed)
green onions
pecans (instead of walnuts)
grated carrots
cucumber chunks
