Black Bean Dip
Ingredients:
- 2 cups dried black beans (4 cups cooked)
- 1/4 cup oil (chipotle or garlic oils are good)
- 1 onion, chopped
- 1 bell pepper, chopped (any color or combo)
- 3 cloves garlic, minced
- 2 T cumin
- 2 T coriander
- 1 T chili powder
- 1/3 cup apple cider vinegar
- pepper and salt to taste
- hot sauce to taste (optional)
Directions:
Cook dried beans as usual or use equal amount of canned beans.
Fry onion, garlic and pepper in the oil until soft. Add spices and lightly fry another minuite, then remove from heat and add vinegar.
Place all items in food processor (in batches if necessary) and process until desired consistency.
