Mexican Cole Slaw
Ingredients:
- 2 green apples (sliced into matchsticks)
- 2 red apples (sliced into matchsticks)
- 1 head red cabbage (shredded)
- 1 head green cabbage (shredded)
- 1 red onion (diced)
- 1 can corn (drained)
- 1 can black beans (rinsed and drained)
- double recipe of citrus-cumin dressing
Directions:
Toss all ingredients together and coat with dressing. Leave in the frig for several hours, turning often to evenly spread the liquid.
