Seitan Stroganoff



Slice two 8oz packages of seitan into strips and pan-fry in canola or olive oil until golden and remove from pan.

Fry one sliced onion until golden, add garlic (optional) and also remove from pan.

Over med-high heat, add 2 tbs. of soy margarine (or olive oil) until melted, and add 2 tbs. of flour and mix together until a light paste forms, let cook for about 2 minutes to give it a little color. Add 2 cups of veg stock and whisk until incorporated and the gravy starts to thicken -- about 2 minutes.

Add 1 tbs. of plain mustard and whisk. Then, add 1/2 cup of soy sour cream, whisk and bring back to a simmer.

Finally, put the seitan and onions back into the gravy and stir to incorporate. Serve over pasta...
