Mojito Tofu

Ingredients:

• 1 package firm tofu, drained
• 1 red onion, sliced
• 1 green pepper, julienned
• 1 batch, mojito marinade sauce
• Mojito Marinade
• 2 cloves garlic, minced
• 1 lime, juiced
• 1 cup cilantro, chopped
• 1 cup orange juice
• 1/2 onion, minced
• 1/2 cup olive oil
• 1/8 cup apple cider vinegar
• 1 tsp cumin
• 1 tsp oregano
• salt and pepper to taste

Directions:

slice tofu into 4 pieces

marinade everything for a few hours

bake them and enjoy :)
