Zucchini Cake
Ingredients:
- 3 zucchinis, shredded (~ 2 cups)
- 1 cup sugar
- 3/4 cup soy yogurt
- 1/2 cup canola oil
- 1/2 cup apple sauce
- 3 cups flour
- 1 tbs vanilla extract
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
Directions:
preheat oven to 350F
mix sugar, soy yogurt, canola oil, and apple sauce
add shredded zucchini and mix
sift rest of the dry ingredients
add them slowly into the batter
bake for 50 minutes or until golden brown
