Cheesecake with Tofutti

Ingredients:

• 1 8oz container Tofutti cream cheese
• 8oz silken tofu
• 1 cup sugar
• 4 Tbs pineapple juice concentrate
• 3 Tbs cornstarch
• 1 Tbs coriander
• 1 tsp vanilla extract
• 1/2 tsp lemon extract
• Juice of half a lemon

Directions:

Blend everything in a food processor until smooth. Pour into a baked crust and bake for 30-40 minutes at 350 degrees.
