Cheesecake with Tofutti
Ingredients:
- 1 8oz container Tofutti cream cheese
- 8oz silken tofu
- 1 cup sugar
- 4 Tbs pineapple juice concentrate
- 3 Tbs cornstarch
- 1 Tbs coriander
- 1 tsp vanilla extract
- 1/2 tsp lemon extract
- Juice of half a lemon
Directions:
Blend everything in a food processor until smooth. Pour into a baked crust and bake for 30-40 minutes at 350 degrees.
