dice potatoes and boil until soft
meanwhile, steam greens until deeper green color and wilty
toast shells if desired
once potatoes are tender, drain
add spices, soy milk and whip/mash until creamy
adjust seasonings as desired and set aside, covered
drain greens, press down to squeeze out excess water
mix greens and minisweet bell pepper into potatoes
adjust salt/pepper as desired
spoon potatoes onto tortillas and top with soy chorizo
