Crockpot Corn Chowdah



1. Saute onions and garlic in 1/4 cup water until onions are translucent

2. Meanwhile, add corn, carrots, potatoes, veg broth, rosemary and sage to crockpot

3. Once onions are cooked, coat with flour

4. Add onion mixture to crockpot, mix & cover

5. leave on low all day (6-8 hrs)

6. Add soymilk 5 minutes before serving & remove bay leaf

7. salt and pepper to taste

Variation: Add Cayenne or Chipotle powder for a spicy twist! (You could even add jalapenos!)
