White Bean, Sage and Garlic Cutlets
Ingredients:
- 1 400g tin Cannelini Beans
- 1/2 cup Gluten Flour (Vital Wheat Gluten)
- 1/2 cup Breadcrumbs
- 1 Tbsp Olive Oil
- 1/4 cup Vegetable Stock
- 2 Tbsp Tamari (or Soy Sauce)
- 1/4 tsp Salt
- 1 1/2-2 cloves Garlic
- 1/2 tsp Lemon Zest
- 1/2 tsp dried Sage (up this to 3/4 tsp if you like)
- 10-12 fresh Sage Leaves, chopped finely
Directions:
Mash the beans in a small-medium sized bowl and add remaining ingredients. Knead for about 3 minutes until it all comes together. Divide mixture into 4 pieces and shape as desired. Bake at 180C for 20 minutes, turn and bake a further 10 minutes.
