Marvelously Moist Vegan Brown Sugar Cookies



Preheat oven to 350 degrees. In a bowl, mix your flour, baking soda, ginger, cinnamon and salt.

Mix butter and brown sugar in a separate bowl for 2-3 minutes. Add applesauce and maple syrup and mix to combine.

Add dry ingredients to wet; stir to combine just until flour has disappeared. Refrigerate dough for about 15 minutes, until slightly more firm but not cold or crumbly.

Mix together 1/4 cup brown sugar and 1/4 cup white sugar on a plate. Line a baking sheet with parchment paper. Form tablespoon-size balls of dough and lightly roll in sugar mixture. Drop onto the baking sheet. Lightly press tops of balls with a fork. Bake cookies for about 8 minutes, or until a little brown on edges.(Oven temps may vary.) Leave on baking sheet for another 2-3 minutes before transferring to a cooling rack or plate.
