Meatballs or Lunchmeat
Ingredients:
- Meatballs or lunchmeat (leave out beans for lunchmeat)
- 1 cup vegetable broth
- 1/2 cup pinto beans
- 2 Tbs soy sauce
- 2 Tbs vegan Worchesterchire sauce
- 2 Tbs olive oil
- 1/4 cup nutmeal or breadcrumbs
- 3 Tbs oatmeal
- 1 cup vital wheat gluten
- 2 Tbs tapioca
- 1 tablespoon of onion and garlic powder (scant tablespoon)
- 1 teaspoon each of
- fennel (optional)
- sage
- parsley
- oregano
- thyme
- 1/2 teaspoon of:
- red pepper flakes
- paprika
- cumin
Directions:
In a blender or food processor:
2 tablepoons soy sauce and worchesterchire sauce
1 cup veggie broth
1/2 cup beans (soft beans--rinsed and drained)
2 tablespoons oil
mix wet in dry. knead 2-3 minutes, rest, knead 1-2 minutes. cut evenly or shape for meatballs, foil(optional. too much work for me), steam in water/beer/onion for 45 minutes
