Spanish Rice



Melt shortening in large skillet. Add rice and saute until golden brown. Reduce heat. Add onion, bell pepper, tomatoes, garlic and pepper. Mix well. Add 1 1/2 cups warm water, salt, chili powder saffron powder and cumin powder. Cover, let simmer until almost dry. Add 1 1/2 cups COLD water, a little at a time. Cook over low heat until fluffy.
