Easy Stew



Pour the soup in the crock pot. Set on high. Add any hard veggies (carrots and potatoes for sure) cut in big chunks and allow to come to a boil. This should take about one hour. Turn down to medium and add medium hard veggies (peppers, onions, broccoli) and allow to simmer for one hour. Add soft veggies (squash, eggplant, mushrooms) and allow to cook one more hour. Toss in 1 to 1 and 1/2 cups cooked rice or barley. Serve once warmed through.
